Celebrando con comida tradicional y patrimonial

The Ecogastronomy and Local Products Community, Terra Madre Market of Slow Food, and others present the event “Gastronomic Fair: Let’s Celebrate with Traditional Costa Rican Foods.” Participant: researchers, students, chefs, traditional cooks. The event is open to the public. WWe face the challenge of bringing visibility to the good and healthy gastronomy that comes from the diverse regions of Costa Rica. In San José, the fast-paced and cosmopolitan lifestyle has led to the gradual loss of traditional foodways. Through this initiative, we seek to reconnect the public by offering tastings of our rich and flavorful culinary mosaic—one that is truly worthy of recognition as Cultural Heritage. Example: the cuisine of Tucurrique, centered around pejibaye, which was featured in an innovative recipe competition held at the National Museum. Another is the Nicoya region, recognized as one of the world’s Blue Zone
