The chocolate paradox

For us in Norway, the pre-Christmas focus on good food and reflection on food traditions and qualities is a perfect fit. Slow Food Bergen invites members and friends to Terra Madre Day. We will be serving some traditional Christmas delicacies and samples related to today's theme: CHOCOLATE Not only is chocolate a Christmas treat; it is produced by local companies in Western Norway, has been associated with slave labour, is both junk food and a delicious luxury, and is linked to major international injustices and proud plantations and skilled workers with long traditions in many parts of the world. Chocolate is a health problem and a well-documented health food. It first arrived in Europe in Turin, and is thus linked to Slow Food's field of interest. We will learn and taste... with Thor Øivind Jensen. In addition, we will taste this year's lye fish, prepared in the traditional manner with ash and crystal soda.
