The Memory of Flavor from Soil to Table

The event Gastronomy, Culture and Sustainability: The Memory of Flavor from Soil to Table will be held at the Mersin Hilton Hotel on December 6-7, 2025. The program focuses on the deep connection between gastronomy, cultural identity, and sustainability. Academics, writers, and industry leaders will discuss the political journey of food , the interaction of palace cuisine and ethnic cultures , and the impact of migration on gastronomic memory. Sessions will examine gastronomy as a cultural heritage tool , while also aiming to map sustainable production models through local producer-chef collaboration and agroecological farms. The program will conclude with the "Tasting of Shared Flavors" and a visit to the Tarsus Earth Market.
