Saudi Coffee Preparation and Cultural Heritage

Hassan Bin Yahya showcases ancient cultivation techniques for coffee beans, such as the Khawlani Arabica from Jazan Province, which are included in the Slow Food Ark of Taste to protect their heritage. The preparation highlights the distinctly light roast (blonde or golden) preferred in the culture of Saudi Arabia's central region, as well as the traditional methods of preparing Qahwa (Saudi coffee). This involves grinding the lightly roasted beans and mixing them with aromatic spices, most commonly cardamom, but also sometimes saffron, to create the unique yellowish hue and flavor that symbolizes generosity and hospitality.
