18th-Century Recipes – Making and Tasting “Zostes”

On December 10, Valmiermuiža will celebrate Terra Madre Day with a culinary workshop exploring local food and 18th-century culinary heritage. Guided by culinary heritage enthusiast Indra Vīlistere, participants will recreate recipes from “Tā pirmā pavāru grāmata, no vāces grāmatām pārtulkota” (“The First Cookbook, Translated from German Cookbooks”), printed in Rubene in 1795. We will prepare and taste historical “zostes” – rich sauces served with vegetables and boiled tongue – and rediscover local ingredients through historical recipes. The event is organised by the Valmiera Municipality Manor Network and Valmiermuiža Association of Culture, home of the Slow Food Community “Good, Clean and Fair Food in Valmiermuiža”, in cooperation with Valmiermuiža Craft Brewery and with the support of Valmiera Municipality.
